About the Coffee
We're happy to have this vibrant and bright coffee back in our lineup! This is an anaerobic honey processed coffee – anaerobic means without oxygen, and honey refers to the coffee being dried with the sticky fruity mucilage still intact. More specifically, the coffee was fermented while still being inside the coffee cherry fruit, sealed in an oxygen-free environment, then pulped free of most of the coffee cherry, and left to dry with the sweet mucilage still intact. The fermentation can take place in the cherry, or de-pulped in the mucilage, but in this case it was fermented in the cherry, and then dried in the mucilage, resulting in a honey processed anaerobic. Confusing? A little bit! But all this hard work pays off as this coffee has some very unique flavors that you don't find in your regular cup of coffee!
