About the Coffee
Oscar and Francisca Chacon, third generation coffee producers and pioneers of innovative processing, have developed unique methods for producing honey and natural processed coffees at Finca San Isidro, one of the farms operated by the Las Lajas group in Costa Rica. This 'Alma Negra' natural processed coffee is created through a meticulous process, starting with perfectly ripe cherries laid out on African-style raised beds and then rotated for even drying. It is then transferred to a greenhouse covered patio where it is dried in the sun and raked into mounds at night to preserve the processing during cooler hours. This results in a coffee with floral, fruity, and winey flavors, including tasting notes of blackberry syrup, meyer lemon, and hibiscus, and a pleasant winey acidity. This is a must-try for anyone looking for unique and exceptional flavors.
